Is celebrating cultural diversity important to you?
Yes, because there's cultural diversity even within my Italian heritage. My mother is from the north of Italy and my father was from the south originally, from Puglia.
Celebrating these differences is a way of accepting and bringing people together and it makes our lives and relationships more meaningful.
Has Australia's rich cultural diversity impacted on the foods you cook?
I cook food that always has a foundation in the Italian heritage. Having said that though, like any region in Italy, the food and culture evolves with the influence of its environment be it the climate, the produce or the people.
This is why you see such diversity across the regions in Italy and why I refer to my cooking as Melbourne Italian.
Hospitality is very culturally diverse industry, what's it like at your restaurants?
The beauty of our industry is that we are all brought together by food and hospitality.
Why is having an integrated and harmonious workplace important?
Once people let their personality come through and feel comfortable, it creates a happy, energetic environment, which in turn also means you'll have happy customers!
Respecting differences and being able to trust is very important.
