Chicken Pork Adobo

Adobo is considered as the signature dish of the Philippines. Almost all meats, seafood,and vegetables can be cooked using this method.
INGREDIENTS1 kg pork, cut into cubes
1 kg chicken (any part will do), cut into small portions
1/2 cup soy sauce
1 cup vinegar
1 head garlic (crushed, whole or minced, as you wish), separated to 2 portions
1 medium-sized white onion
2 tbsp cooking oil
10 whole peppercorns
1-2 Laurel (bay) leaf
1/2 cup water
METHOD1. Put all ingredients (except onion and 1 portion of garlic) in a stock pot. Simmer, WITHOUT STIRRING, in low fire for about 1 hour.
2. In a separate pan, sauté garlic and onion in cooking oil.
3. Once garlic is brown and onions transparent, add to the stock pot. Stir and boil for another 5 mins.
4. Serve with steamed white rice.
